INGREDIENTS
1 pound Dried red beans
1/4 pound Salt pork
3 cups Onion -- chopped
1 bunch Green onion -- chopped
1 cup Fresh parsley -- chopped
1 cup Green bell pepper -- chopped
2 Cloves garlic -- minced
1 teaspoon Cayenne pepper
1 teaspoon Black pepper
3 dashes Tabasco sauce
1 tablespoon Worcestershire sauce
8 ounces Tomato sauce
1/4 teaspoon Oregano
1/4 teaspoon Thyme
2 pounds Andouille or Polish Sausage -- sliced 1/4" thick
White rice -- cooked
Place beans in a large pot, cover with water and let soak overnight.
Drain.
Add fresh water to cover by 1 inch.
Add salt pork, bring to a boil, cover, reduce heat and
simmer 1 hour.
Add onion, green onion, greenpepper, garlic, cayenne,
black pepper, Tabasco, Worcestershire, tomato sauce,
oregano and thyme.
Stir well.
Bring back to a boil, cover, reduce heat and simmer an
additional 45 minutes, stirring occasionally.
Add sausage slices and cook until heated through, about 15 minutes.
